Part two of the simple sweets trilogy! This one I did especially for the busy mom/dad. Now I know that coming home after a long day at work, to then make dinner is hard enough without having to consider dessert. This cake is super easy and the best part is that most of the work is already done for you!
1 Box of Lemon Cake Mix
1 1/4 C Lemon Seltzer Water
2 Egg Whites
1 1/2 Bags of Frozen Mixed Berries
1 C Sugar
1/4 C Honey
1/4 C Lemon Juice
2 tsp Corn Starch
1 tsp Salt
Take out your frozen fruit and let them defrost
Preheat oven to 350 degrees and grease cake pan
Mix together the boxed cake mix, seltzer, and egg whites (the seltzer cuts down your prep time and ingredients, plus the kids can do this part!)
After the batter is at a smooth consistancy, pour into cake pan and bake for 30 mins
While the cake is baking, place the fruit in a sauce pan and let them heat up
Add in the sugar, lemon juice, honey, corn starch, and salt
Let the topping stew together until the fruit has become soft but not mushy, the consistancy should be somewhat thick
Serve and enjoy!
