HAWLEY- An avid baker, Joy Simons of Pink Tiger Baked was busy selling her goodies at the Hawley Farmers' Market Friday afternoon June 20 in Bingham Park. A part-time business for Simons, who is retired from the restaurant industry, she said her business started because of her love for baking and she needed something more to do. With 60 varieties of cookies, made from both homemade recipes and an array she finds online, Simons said the monotony of the motions is relaxing as she plays her rock 'n' roll music while she shapes the cookies herself. This is her fourth year at the Hawley Farmers Market, which is sponsored by the Downtown Hawley Partnership. The Hawley Farmers' Market is open every Friday from 2 to 5:30 p.m.
